Europe goes gung ho for grass!

A consortium of universities and research institutes from the UK, France, and Germany are now investigating the health benefits of grass-fed beef. So far, work by Dr. Nigel Scollan from Wales confirms that grass-fed beef is richer in omega-3 fatty acids, conjugated linoleic acid, and vitamin E. Meanwhile, taste panel studies at Bristol University have discovered that UK consumers prefer the taste of grass-fed beef. Says Scollan, "This will help to make beef an even more attractive product to consumers and help the beef producer by adding value."
