Waterfall Hollow Farm is a woman-owned producer of organically-managed pasture-raised and pasture–finished beef. Our beef steers are allowed to grow on pasture a full year longer than most producers’ calves, which yields a much more tender and sweet-flavored beef.

Waterfall Naturals™ Pasture-Finished Beef is an Arkansas product. Our USDA-inspected processor selects only the most tender cuts for our steaks and roasts; the beef is packed in clear heavy poly with our custom USDA-approved label, then is vacuum-sealed so the contents can be seen at a glance and the bags cut open with scissors. All beef is dry-aged and expertly hand-cut, and the hand-packaged beef is frozen immediately to ensure the highest quality. Each package contains 100% beef.

We accept money orders or personal checks, and ship next-day throughout the continental US via FedEx, UPS, or DHL. Our products may be found in the freezer section of Ozark Natural Foods and at Ozark Cooperative Warehouse, both in Fayetteville, Arkansas.

Walker Creek Ranch offers 100% grassfed locker lambs available from June through October. These are sold as whole carcasses for $3.25 per pound of hanging weight, or $3.50 for half. This includes cutting and packaging to your specifications. Orders usually take about three weeks and can be picked up at the locker in Orland. Shipping can be arranged and is extra. Average dressed weight runs between 40 – 60 pounds. Lamb sausage is also available on request. Orders are taken by phone, fax or e-mail. USDA inspected.

The key to the success of our lambs is that they are naturally adapted to a grazing environment and our climate. We use two breeds, the St. Croix and the White Dorper. Both evolved in hot climates and were selected under grazing conditions for many generations. Animals that are suited to their environment are less likely to suffer stress or develop health problems. Neither breed requires shearing and both are calm and docile in nature. Lambs are raised on pastures that include strawberry clover, Ladino clover, ryegrasses, tonic plantain, chicory and dandelion in a complex mix of forages. Both animals and pastures thrive on a system of frequent moves which give lambs fresh pasture every day or so and allows the forage to regenerate. Lambs are provided with free choice salt/mineral mix only, with no hormones or antibiotics.

We think you'll be impressed with the mild flavor and tenderness of our lamb and we hope you'll tell your friends.

Colorado

At Desert Weyr we develop and implement sustainable systems to conserve rare and endangered farm animals. Our primary goals are to conserve genetic resources and promote sustainable agriculture systems. We currently work with sheep, chickens, and geese. Our Black Welsh Mountain sheep provide a small but tasty carcass. We breed Pilgrim geese and also raise heritage breeds of chickens for eggs and meat.

We offer mutton by the piece year round from our on-farm store. Whole lambs and mutton, custom butchered, are available in the fall. Raw fleeces, roving, yarn, quilt batts and tanned hides are available year-round. Geese will not be available until we again have slaughter facilities, hopefully in 2008. Chickens are by reservation only and must be ordered in January. We raise one batch of chickens a year; to get on our list for chickens please contact us in December. We also keep a few laying hens from rare breeds and eggs are available at the farm store.

We take advantage of our animals' ability to transform inedible plants and insects into healthy meat and wool. Our grass finished lamb and mutton carcasses are very lean and yet remain tender and tasty. Our geese are pasture raised with some grain for optimum health. Our chickens range outside eating a variety of plants, insects, worms, and grain supplements.

We do not feed antibiotics or growth hormones to any of our livestock. We do provide humane care including vaccinations and deworming as needed.

We are located in Western Colorado and are also open at the farm store on Saturdays from noon to 5pm and other days by appointment. Meat must be picked up at the farm. Wool products can be shipped worldwide.

The James Ranch faced a fork in the road in 1992. Should the three families living on the land turn the land into a golf course and housing development for the rapidly growing Durango community, or should they devote themselves to grassfarming instead? The land had been in the James family since 1961, the family was very attached to it, and the third generation was just coming up. After spending two years considering all aspects—most importantly the impact on the family and grandchildren—they chose grassfarming.

Today their many grateful customers rely on their grassfed beef. The beef is available by mail and you are invited to view our website to place an order.

Grandmother's Farm is a natural sustainable grass based farm cared for by my wife and I with our seven children. The farm name is a tribute to "Bami," the children's grandmother, who loved the beauty of the farm and having her grandchildren be part of it with her.

We offer brown eggs year around from happy hens that forage on all-natural pastures. Duck eggs will be available in the fall of 2004. Pastured poultry—chickens and turkeys—are available October through June and must be pre-booked well in advance of pick up. Although we are not certified organic, all of our pastures are managed organically and we do not use hormones, steroids, antibiotics or chemical wormers in our production. Our pastures are fertilized and kept pest-free strictly by organic methods.

Pure, raw, organically produced honey is available most of the summer. We also offer pure maple syrup that comes from a family farm in New Hampshire that uses no formaldehyde in their production. There are limited amounts of grassfed lamb available and we are increasing the flock for greater availability. We have premium quality, guaranteed tender, grassfed and grass finished beef available by the cut for shipping to your door—anywhere in the United States. Depending on the time of year, you may also find organically grown herbs, vegetables, hanging baskets, Stevia, and fruit, flowering and rare trees.

Other than the grassfed beef, all of our products are picked up here at the farm so e-mail us for an availability list. Visitors are always welcome—just call first to make sure we are available. For those of you in Florida, we now offer organic landscape management and pasture restoration services under the name GrassWorks. We can get you off the water polluting and health destroying monthly chemical spray and fertilization treadmill.

Lava Lake Lamb is 100% natural Idaho grass-fed lamb – never placed in a feed lot, never given any hormones, never given antibiotics.

Our lambs graze with their mothers and continue to drink mother’s milk all their lives, getting important antibodies for good health and vitality, and making the best-tasting meat. Lava Lake’s lambs also spend most of their lives grazing on wild, fragrant range grasses, herbs and other plants, as Nature intended.

Raised with care by our experienced shepherds, our lambs are truly “free-range.” Traveling from the deserts of the Snake River Plain to the high mountains near Sun Valley, our animals log hundreds of miles during their lifetimes – they are never confined in feedlots. The result is meat that is lean yet tender and flavorful – we think you’ll find it the best you’ve tasted.

Our headquarters is Lava Lake Ranch, located just southeast of Sun Valley in Idaho’s Pioneer Mountains. As a family of ranchers and environmentalists, we are committed to restoring and preserving this land because of its history, its beauty and its biological diversity. We are so committed to this principle that all net profits from our grass-fed lamb sales help fund our land conservation work.

Lava Lake Lamb is available year-round and can be purchased by individual cuts, halves or wholes and shipped anywhere in the U.S. It is USDA-inspected, dry-aged for ten days, then frozen and cryovaced to retain its freshness and flavor.

To place an order, or for more information, visit our website or contact us at (208) 788-9778.

SkyLines Farm is located in remote northern Idaho, about an hour's drive from Moscow. Since 1992 we've been carefully building a flock that now numbers 100+ superbly healthy, vigorous, Romney and Romney-X sheep. The flock produces exquisite handspinning fleeces and delicately-flavored, lean, delicious grassfed lamb.

The SkyLines sheep have always been hand raised, using organic methods that exceed even the USDA's organic standards. Absolutely no antibiotics are used, or growth or fertility hormones, vaccinations, or pesticides like de-lousing agents or chemical wormers. Nature's miracle herb garlic figures heavily in our organic management program (some think this could be one reason our lamb tastes so good!).

SkyLines lambs spend the entire summer alongside their mothers, freely grazing the farm's lush green pastures. Our intensive rotational grazing program ensures that the sheep are always dining on "salad bar fresh" greens, so lambs easily reach market weight on mom's milk and grass alone. They receive no grains or feed supplements.

A team of Great Pyrenees guard dogs patrol the farm 24/7, providing excellent predator-friendly protection for the flock.

Whole or half lamb available September & October, but reserve your lamb early. Free delivery on local orders, out-of-area orders shipped second-day air.

Visit SkyLines' extensive website for much more detail.

Solina Farms of Idaho sells only Premium, Natural, Grass Fed Beef.

Since 1999, Solina Farms has raised grass fed steers on Boise River bottom pastures, using no pesticides or chemicals to ensure our children are eating healthy meat products. We feed only unsprayed alfalfa and grass hays from local ranchers who are also committed to all-natural values. We use cross-fencing and rotational paddock grazing to increase river bottom grass vigor and we control weeds without herbicides.

All Solina Farms steers come from registered Scottish Highland cattle. Scottish Highlands are a pure breed of hardy heritage cattle. Grass fed Highland beef has tested lower in cholesterol than buffalo. By comparison, commercial, grain finished beef, buffalo, and Highland beef tests show 3 times the cholesterol over grass fed beef. Naturally foraging Highlands have a deep, red color and a rich, complex flavor. Our grass-fed, Highland beef is deep red in color, heart-healthy and delicious. Highlands also have the largest ribeye in the industry.

Solina Farms is a member of AHCA (American Highland Cattle Association) and the AHCA Quality Beef Program. We are committed to the same natural, humane pasturing and handling practices still used by Highland cattle farmers in Scotland today. Solina Farms and our AHCA breeder partners comply with the AHCA Quality Beef program contract and our own ethics which require humane handling; no usage of antibiotics, hormones, steroids, or non-vegetarian feeds; slaughter before 36 months of age; and a minimum of 14 days hanging time to ensure quality, tender, delicious beef.

Natural, grass feed Highland beef is available from Solina Farms no less than 4 times per year in limited quantities. We will deliver in the Boise area, or make special arrangements for shipping if you live outside of this area. Please call or email so we can understand your values and workout the details of your needs. This is delicious, premium beef.

Other Side of the Fence Farm is dedicated to raising the best quality food possible from our pastures near Huntingburg in southwest Indiana. Our primary product is chemical-free grass-fed beef sold by 1/4, 1/2 or whole.

The animals are on a rotational grazing system with fresh grass and room to move about. Our cattle are never confined! We ensure all animals are not given hormones, antibiotics, animal byproducts or drugs of any kind. This we have done since 1991. The fertility program used is the cornerstone of the operation in that everything done in the soil, in the grass, in the animals and ultimately ending up in us is for quality NOT quantity.

Animals are processed only after they are ordered. The cut, wrapped and frozen finished product can then be picked up at the farm or UPS shipping can be arranged.

2005 plans include pastured pork, chickens and eggs.

The Koether Ranch offers grassfed beef on a year-round basis. We have been organic since 1985, but are not certified. We prefer to sell quarters or split halves, but we sell individual packages as well. We usually ship frozen meat 2nd Day Air in special containers.

Our goal is to provide the best possible care and diet for our animals so that our customers can get the healthiest possible meat. The cattle never eat grain. They eat fresh grass from April thru November and winter on dry hay. They are fed a combination of kelp, minerals, and refined natural salt year- round. We complete the cattle's life cycle with humane slaughter. They are killed in our corral while standing quietly and then are hauled to the processing facility. This prevents any unnecessary stress on the animal.

We usually harvest our beef in late October – early November when the animals are 16 months old. We like to have large orders placed prior to slaughter, but we try to keep a supply of frozen meat on hand year-round.

Recently we added lamb, goat and broiler chickens as well. For any further details, please feel free to call anytime.

Greg Koether, 26046 Giard Road, McGregor IA  52157. (563) 873-3385.

Kentucky

Colcord Farms–Blue Grass Finished Beef® dedicates 630 acres to raising grass and clover for their 400–500 black steers. "Our calves come to the farm in the fall soon after they are weaned. In April, they begin to grow rapidly on the springtime nourishing grasses and clovers. No pesticides or herbicides are used on the forage. The grass grows naturally without being pumped up with nitrogen fertilizer. The steers move from field to field with new pasture every few days. The water flows from the farm springs, wells, and ponds with no added chemicals. The slow movement across the rich fields means they can be finished as succulent marbled beef without any grain. The fresh grass gives them a healthy balance of fat and lean and special flavor."

The beef is USDA-approved for supply to restaurants, retail outlets, and direct sale to consumers. Look for it in Lexington, KY at the Good Foods Co-Op and at the Blue Moon Farm stall at the Lexington Farmers Market. In Louisville, KY the beef is sold at the three Rainbow Blossom stores.

Sides of beef are available at the processing plant. (Call for more information.) Refrigerated transport is available to supply retail outlets in Lexington, Louisville, and Cincinnati.

Spring Hills Farms—All Natural Pasture-Raised Beef and Chevon—"Bringing Family Farm Values to Your Table."

We are a small family farm that specializes and strives to raise all our animals as naturally and organically as possible—the way God originally designed things. We are now in the process of getting our All Natural Beef certified organic. Our beef are raised on lush pasture and high quality hay with abundant natural springs and creeks for water. They do not receive any hormones or steroids or prophylactic antibiotics. Our beef is available for sale by USDA cuts, or in half/whole beef, mostly year-round. USDA cuts can be shipped or we can deliver locally. See our website for more details.

We plan to begin selling work shares in our goats in the spring of 2004 to make raw milk available to those who desire raw goat's milk. Our goats get plenty of good pasture, but they also get feed at milking time. Our goat's milk can be shipped also.

We invite you to come visit our farm, meet us and see our animals! Our farm is family-oriented and many of our animals are very friendly.

Willow Hills is a small family farm seeking to practice agriculture in the most natural way possible. We strive to find simple methods using nature to solve growing problems in contrast to the more common industrialized agricultural methods. Our focus is to maximize nutrition in our foods through good management and organic-type practices. No pesticides, drugs or herbicides are used. All of our animals are pastured, and our ruminant animals (cows, sheep & goats) are not fed any grain. We consider providing life giving food to be our ministry. We also offer extensive health information as well on our website. Our goal is to help those whose health has been destroyed by the food industry to regain it.

We offer pastured poultry (chicken and turkey), pastured pork, genuine free-range eggs, raw milk, and grass-fed beef and lamb. All meat is USDA inspected and available from our freezers by the cut.

Shipping is available on our products. Pure, unadulterated milk (not pasteurized or homogenized) that is from grass-fed cows is available on a cow-share basis. For more details on our products and their availability, please contact us or visit our web page.
