American Ultra Lean Beef Products LLC is
a group of three farms (Central States Parthenais, Michael Means; G&S
Farms, George & Stacy Fisher; and Dietrich Farms, Gordon & Art
Dietrich) that work together breeding Parthenais bulls to Limousin
cows, and 1/2 Limo and 1/2 Parthenais cows, as well as crossing with
other lean breeds (e.g., Salair, Piedmontese, Limo/Charolais, and Simbra),
all back to our Parthenais bulls.
We have been raising beef for Laura's Lean Beef program
for many years in their All Natural Lean program. The Parthenais breed
has cut the fat by 60-70% and more, and has added greatly to the tenderness.
We grow our own feedstuffs which include grass, grass haylage, peanut
hay, and rye grass haylage; we winter on rye and oats.
We use no hormones or antibiotics in any of our slaughter
cattle. We use rotational grazing methods with low stress handling. Cattle
are harvested and processed at Krehbiels Specialty Meats, McPherson,
Kansas, an HAACP and USDA inspected plant.
We sell very lean beef cuts and burger products
infused with canola oil, which is patented "High Omega 3 - Saturated
Fat Free"® Meats. Many of our customers are health conscious
consumers, especially cancer patients and heart patients who need to
restrict saturated fat and cholesterol. Our beef is featured at the Cancer
Treatment Centers of America Tulsa, Oklahoma facility in the patients',
caregivers' and staff cafeterias.
We wet age our beef 21 days in cryovac bags and then
check tenderness on each batch and age longer if necessary to keep constant
tenderness. We remove all sinew and visible fat.

The Chapman Creek Cattle
Company is now finishing its Angus beef cattle the old
fashioned way—at pasture. The exceptional taste of Angus beef
makes it the world's premium brand of fresh beef.
Our grass fed Angus is naturally lean, yet tender
and flavorful, something only a truly natural product can provide. It
is the delicious healthy choice.
We select only the finest Angus calves from Flint
Hills ranchers. Antibiotics and hormones are not necessary when these
calves are finished on our native grasses and legumes and kept away from
a feedlot environment.
All our our cattle are processed and dry-aged one
at a time in a state or federally inspected processing plant.
All retail cuts of meat and split sides are available
for pick-up the first Saturday of the month from April-October at the
Ranch, in Topeka, or at the Overland Farmers Market. For pricing information

Dale Family Farms is a small farm owned
and managed by two generations of Dales. Located in South Central Kansas,
we are striving to be sustainable. To do this, we have learned that
we must better utilize our resources through improved grazing practices
and reduced reliance on fuel and equipment. Over the last few years,
we have realized that letting our animals remain in their natural environment—doing
what they do best, grazing—will be our key to sustainability.
Our beef comes from cattle that are finished
on a strict forage diet of legumes, grasses, and forbs. The beef we sell
contains no synthetic growth hormones and no antibiotics. When
prepared properly, we have found that grass-finished beef is as tender
as grain fed beef with a much richer, fuller, beef flavor. Beef is available
by the cut, wholes, halves and quarters.
Chickens are allowed to free range during
the day, foraging for green grass, seeds and insects. This “salad
bar” approach to their diet improves the flavor and texture of
the meat and the eggs they produce. Both broilers and fresh eggs are
available on the farm.
Currently, we make large deliveries to Kansas City,
KS, Wichita, KS, and Salina, KS. Call if you would like to make arrangements.
There is a $.25/pound delivery charge.

grass-fed dairy, 100-percent grass-fed beef, pastured pork and

All our animals are raised in a low-stress, natural
environment. We don’t use antibiotics, growth hormones, herbicides,

Janzen Family Farms produces 100% grass-fed beef from
Angus adapted to the region. We raise them to meet or exceed criteria
established by the USDA for the “grass (forage) fed marketing
claim standard.” Our 100% grass-fed Angus are pastured
every day. They are hormone-free; vaccines and potential medications
are kept to a bare minimum. We reserve the use of antibiotics for special
cases. They are slaughtered at a small, state-inspected, family-run
meat locker near the farm.
We are moving toward more sustainability: Our cropland
is in organic transition; our virgin prairie was certified organic in
2008 by the Oklahoma State Department of Agriculture. We use crop rotation,
cover crops, organic fertilizer, rotational grazing, careful water management.
We freshly stone-mill certified organic wheat on site.
To maintain financial viability, we also use our
pre-existing conventional cattle-feeding facilities. Feedlot manure is
used as fertilizer in our soil-building program. We keep our conventional
cattle strictly separated from our direct-marketed 100% grass-fed animals.
You can purchase by the cut, in discounted “packs,” or
in bulk. You can pick up, or we deliver in the Newton, Wichita, Emporia,
Topeka and Lawrence areas. We sell at farmers markets and retailers.

using humane, sustainable farming practices with no synthetic pesticides

Myers' Farm is a small family farm located
in south central Kansas. On our farm we raise as many heritage animals
as possible.
We raise a heritage breed of pigs, called
Red Wattles. By raising these animals we hope to help insure survival
of this breed which was once considered extinct until a few head were
discovered in a wooded area of Texas.
The key to the survival of many heritage breeds may
well be the incredible difference in flavor. The rich red marbled meat
of the Red Wattle is beginning to be offered in a few fine restaurants,
but cannot be purchased in grocery stores. We have limited quantities
available now and hope to offer more in the future as our little herd
expands. The Red Wattles on our farm forage free range, and are fed a
natural diet of garden vegetables, skim milk, and corn. We do not use
antibiotics or hormones.
We offer free-range eggs from heritage chickens,
usually spring through fall.
We make products such as feta cheese and yogurt from
fresh grass fed Jersey milk produced on our farm, and jellies from wild
plums. Seasonally, we have free-range beef and fresh vegetables.
All meats are processed in USDA approved facilities. Please email us
for information on availability of products or 2007 CSA shares.

Oak Creek Bison raises
and sells grassfed American Bison.
Our animals graze year round on the same native grasses
that bison have lived on for centuries. In the winter months, their feed
is supplemented with native prairie hay and alfalfa cubes. The animals
are given NO growth hormones or drugs. Parasite control is obtained by
using diatomaceous earth administered in the alfalfa cubes.
In addition to the traditional cuts of meat, we also
have available a chopped and formed 100% grassfed Bison Jerky, which
does not require refrigeration. Bison skulls and hides are also available.
